Our story begins way back in a place called Llano Texas in the fall of 2004, which is home to Coopers Old Time Pit Bar-B-Que. This was the first time I can remember eating real authentic southern BBQ.
I was instantly hooked, as there truly is no substitute for this kind of food. The flavor profile was complex and layered, and the process was so simple yet such an art. I moved to Austin the following year and was a frequent customer of every legitimate BBQ joint in town. I got to know some of the old boys, and they became amazing resources for me as I learned all about BBQ. I started out cooking on a 22.5 inch Weber Kettle that cost me 100 bucks, and spent the next 6 years in the south eastern states learning everything I could about this food culture. I became a certified Kansas City Barbecue Association Judge and have been a KCBS member since 2009. I eventually moved back to Alberta where I continued to perfect my craft. After hosting countless back yard BBQ’s and competing on the major BBQ circuits, I felt it was time to share the gift of southern barbecue with everyone else.
Rollywood BBQ Catering Services was born in July of 2016 and we have had the pleasure of cooking for thousands of people already since we started. Apart from our Catering Services, we will be offering BBQ cooking classes starting in the spring of 2017 and hope to see you there.
